- A pinch of asafoetida (hing)
Step-by-Step Recipe
Step 1: Prepare the Greens
Wash the spinach and fenugreek leaves thoroughly. Roughly chop them and boil in water for 10-15 minutes until soft. Drain and grind into a smooth paste.
Step 2: Make the Base
Heat ghee in a heavy-bottomed pan. Add cumin seeds and let them splutter. Add asafoetida, then garlic and green chili. Sauté for a minute.
Step 3: Cook the Kafuli
Add the green paste to the pan. Add turmeric and salt. Mix rice flour with half a cup of water to make a slurry, and pour it in.
Step 4: Slow Cook
Cook on low heat for 20-25 minutes, stirring occasionally. The Kafuli should thicken to a smooth, creamy consistency.

Serve hot with steamed rice and a generous dollop of fresh ghee on top.
